Ingredients
  

  • 1 3/4 lb boneless skinless chicken breasts diced into small pieces
  • 2 1/2 tbsp olive oil divided
  • 1/2 cup teriyaki sauce and marinade
  • 2 tbsp water
  • 1 tbsp cornstarch
  • 1 tbsp honey
  • 1 cup green onions sliced and divided
  • 1 clove garlic minced
  • 1 red bell pepper cored, seeded, and diced
  • 8 oz sliced water chestnuts chopped
  • 1 cup shredded carrots
  • romaine or iceberg lettuce leaves for serving
  • 1/2 cup unsalted cashews roughly chopped

Instructions
 

  • Whisk the teriyaki sauce, water, cornstarch, and honey in a small bowl until smooth.
  • Heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat.
  • Add the diced chicken and cook until browned and cooked through, stirring as needed.
  • Transfer the cooked chicken to a plate and set it aside.
  • Add the remaining olive oil, garlic, bell pepper, water chestnuts, carrots, and half of the green onions to the skillet.
  • Cook for 3 to 4 minutes, stirring often, until the vegetables are slightly softened.
  • Return the chicken to the skillet and stir in the prepared teriyaki sauce mixture.
  • Cook for 1 to 2 minutes until the sauce thickens and coats the chicken.
  • Spoon the filling into lettuce leaves and top with cashews and the remaining green onions.

Notes

Storage: Store the cooked filling in an airtight container in the refrigerator for up to 4 days and keep lettuce leaves separate.
Reheating: Warm the filling in a skillet over medium-low heat with a splash of water until heated through.
Freezing: Freeze the chicken filling for up to 2 months, but do not freeze the lettuce or cashews.
