Ingredients
  

  • 6 boneless skinless chicken thighs
  • 1 cup fresh raspberries
  • 2 jalapeño peppers thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Pat the chicken thighs dry and season both sides with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat and sear the chicken for 4 to 5 minutes per side.
  • Move the browned chicken to a plate while you prepare the raspberry jalapeño sauce.
  • Add garlic and sliced jalapeños to the skillet and stir briefly until fragrant.
  • Stir in raspberries, soy sauce, honey, and lime juice, pressing the berries gently as they soften.
  • Return the chicken to the skillet and spoon the sauce over the top.
  • Simmer for 6 to 8 minutes, until the sauce thickens and the chicken reaches 165°F.

Notes

Storage: Keep cooled leftovers in an airtight container in the refrigerator for 3 to 4 days.
Reheating: Reheat gently in a covered skillet with a splash of water so the raspberry glaze loosens without scorching.
Freezing: Freeze cooked chicken and sauce for up to 2 months, then thaw overnight in the refrigerator before reheating.
