Ingredients
  

  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon for batter
  • 1 1/3 cups milk
  • 1/3 cup granulated sugar for batter
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter melted and cooled to room temperature
  • 1 tsp baking powder
  • 1 pinch salt
  • 1/2 cup granulated sugar for topping
  • 1/4 cup unsalted butter melted and kept warm for topping
  • 2 tbsp ground cinnamon for topping
  • 1/2 cup chopped dark chocolate for drizzle
  • 2 tbsp heavy cream for drizzle

Instructions
 

  • Preheat the oven to 350°F and grease a mini muffin pan well.
  • Whisk eggs, vanilla, cinnamon, milk, sugar, and cooled melted butter until smooth.
  • Stir in flour, baking powder, and salt just until the batter comes together.
  • Spoon batter into the prepared pan, filling each cup about three-quarters full.
  • Bake for 10 to 12 minutes, until puffed and lightly golden around the edges.
  • Brush warm bites with melted butter, roll in cinnamon sugar, and drizzle with melted chocolate cream.

Notes

Storage: Store cooled bites in an airtight container at room temperature for 1 day or in the refrigerator for up to 4 days.
Freezing: Freeze uncoated baked bites for up to 2 months, then reheat and add fresh butter, cinnamon sugar, and drizzle.
Reheating: Warm in a 300°F oven for 5 to 7 minutes, or microwave briefly until just soft.
Expert Tips: Coat the bites while warm so the cinnamon sugar clings, but let them cool slightly so they do not break.
