Ingredients
  

  • 200 g all-purpose flour
  • 100 g unsalted butter softened
  • 80 g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract for cookie dough
  • 2 tablespoons strawberry powder or crushed freeze-dried strawberries
  • 1/4 teaspoon salt
  • 250 g mascarpone cheese or cream cheese
  • 150 ml heavy cream
  • 75 g powdered sugar
  • 1 teaspoon vanilla extract for filling
  • 300 g fresh strawberries sliced
  • 3 tablespoons strawberry jam or preserves
  • 1 tablespoon water
  • shortbread cookie crumbs for garnish

Instructions
 

  • Beat softened butter and granulated sugar until smooth, then mix in the egg and 1 teaspoon vanilla.
  • Stir in the flour, strawberry powder, and salt until a soft dough forms with no dry streaks.
  • Cover and chill the dough for 20 to 30 minutes so it is easier to shape.
  • Divide the dough into 12 portions, shape into ovals, and press a shallow well into each center.
  • Bake at 350°F for 10 to 12 minutes, then gently press the centers again while the shells are warm.
  • Beat mascarpone, heavy cream, powdered sugar, and remaining vanilla until smooth, thick, and spoonable.
  • Fill cooled shells with cream, top with sliced strawberries, brush with warmed jam glaze, and finish with cookie crumbs.

Notes

Storage: Store assembled cookie boats in the refrigerator for up to 2 days, or keep shells and filling separate for better texture.
Reheating: Do not reheat assembled cookies. Refresh unfilled shells briefly in a low oven if they soften.
Freezing: Freeze unfilled cookie shells for up to 2 months. Thaw completely before adding the cream and berries.
Best Tips: Chill the dough before shaping and press the centers again after baking while the shells are still warm.
Variations: Add lemon zest to the filling, drizzle with chocolate, or use a mix of strawberries and raspberries.
Make Ahead: Bake the shells one day ahead and prepare the filling separately, then assemble close to serving.
