Ingredients
  

  • 12 oz spaghetti

  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions
 

  • Cook the spaghetti in salted boiling water until al dente, then reserve 1 cup pasta water before draining.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and chopped sun-dried tomatoes, then cook for 1 to 2 minutes until fragrant.
  • Pour in heavy cream and simmer gently for 2 to 3 minutes, stirring often.
  • Stir in grated Parmesan until the sauce is smooth and lightly thickened.
  • Add fresh spinach and toss until the leaves wilt.
  • Add drained spaghetti and toss until coated, using reserved pasta water to loosen the sauce if needed.
  • Season with salt, black pepper, and optional red pepper flakes, then serve warm.

Storage: Store cooled leftovers in an airtight container in the refrigerator for 3 to 4 days.
Reheating: Reheat gently on the stovetop or in the microwave with a splash of milk, cream, or water to loosen the sauce.
