- 2.5 to 3 pounds beef chuck roast
- kosher salt to taste

- 2 1-ounce packages dry onion soup mix
- 2 cups water
- 2 14.5-ounce cans beef broth
- 6 to 8 slices Swiss or provolone cheese
- 6 to 8 crusty rolls such as ciabatta
Pat the chuck roast dry, then season all sides with kosher salt and freshly ground pepper.
Heat olive oil in a large skillet over medium-high heat and sear the roast on all sides until browned.
Transfer the roast to a 5- to 6-quart slow cooker.
Add the dry onion soup mix, water, and beef broth to the slow cooker.

Remove the roast, shred the beef with two forks, and discard large pieces of fat.
Return the shredded beef to the slow cooker and let it sit in the warm jus for several minutes.
