Equipment

  • Large skillet
  • Tongs
  • Cutting Board
  • Chef's Knife
  • Measuring cups and spoons

Ingredients

  • 2 chicken breast halves
  • 1/2 teaspoon garlic powder
  • salt and black pepper as desired
  • all-purpose flour for coating
  • 2 tablespoons olive oil plus extra as needed
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms sliced
  • 1/2 medium onion chopped
  • 1 tablespoon Dijon mustard or to taste
  • 1 tablespoon Worcestershire sauce or to taste
  • 3 cloves garlic minced
  • 2/3 cup chicken broth
  • 1/2 cup full-fat sour cream

Instructions

  • Slice thick chicken breast halves into thinner cutlets if needed, then season with garlic powder, salt, and black pepper.
  • Coat the chicken lightly with flour and shake off any excess so the surface browns without becoming pasty.
  • Heat 2 tablespoons olive oil in a large skillet and sear the chicken until golden and nearly cooked through.
  • Transfer the chicken to a plate, then add the remaining olive oil and butter to the skillet.
  • Cook the mushrooms and onion until softened and lightly browned, then stir in the garlic, Dijon, and Worcestershire sauce.
  • Pour in the chicken broth, scraping up the browned bits, and simmer until the sauce slightly reduces.
  • Lower the heat and stir in the sour cream until the sauce is smooth and creamy.
  • Return the chicken to the skillet and simmer gently until the chicken reaches 165°F and the sauce coats each piece.

Notes

Storage: Refrigerate cooled leftovers in an airtight container for 3 to 4 days and keep noodles or rice separate when possible.
Freezing: Freeze for up to 2 months, but expect the sour cream sauce to look slightly less smooth after thawing.
Reheating: Warm gently over low heat with a splash of broth and stir often so the sauce stays creamy.
Expert Tips: Brown the mushrooms well before adding broth because that step builds the savory base of the sauce.
Variations: Use boneless chicken thighs, add extra mushrooms, or finish with parsley, thyme, or dill for a fresh note.
Serving Ideas: Serve over egg noodles, rice, mashed potatoes, cauliflower mash, or roasted vegetables.
