Ingredients
  

  • 1 lb boneless, skinless chicken breasts diced
  • 1 tablespoon Cajun seasoning

  • 1 1/2 cups orzo pasta

Instructions
 

  • Pat the diced chicken dry, then season it with Cajun seasoning and a small pinch of pepper.
  • Heat olive oil in a large Dutch oven or deep skillet over medium heat, then brown the chicken until lightly golden.
  • Add diced onions and bell pepper, if using, and cook until the vegetables begin to soften.
  • Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  • Add the orzo and chicken broth, then simmer uncovered, stirring often, until the orzo is tender.
  • Reduce the heat to low, stir in heavy cream, and let the sauce gently thicken.
  • Remove from heat and fold in Parmesan cheese until smooth, then season with salt and pepper to taste.
  • Garnish with fresh parsley if desired and serve warm while the sauce is creamy.

Storage: Cool leftovers and refrigerate in an airtight container for up to 3 days.
