  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 cups diced ham
  • 20 ounces cheese tortellini fresh or frozen
  • 1 3/4 cups low-sodium chicken broth

  • Stir in the cheese tortellini and chicken broth, then cover and simmer until the tortellini is tender.
  • Reduce the heat to low and stir in the heavy cream until the sauce looks smooth.
  • Add the mozzarella and Parmesan gradually, stirring gently until melted and creamy.
  • Let the sauce thicken for 1 to 2 minutes, then garnish with fresh minced parsley and serve warm.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days once cooled.
Reheating: Reheat gently on the stovetop or in the microwave with a splash of broth or cream to loosen the sauce.
Freezing: Freeze for up to 2 months, but expect the creamy sauce to be slightly less smooth after thawing.
Expert Tips: Add the cheese over low heat and stir gradually so the sauce stays creamy instead of clumping.
Variations: Add peas, spinach, broccoli, mushrooms, or a pinch of red pepper flakes for a simple twist.
Serving Ideas: Pair with a green salad, roasted broccoli, garlic bread, or steamed green beans to balance the creamy skillet.
