Ingredients
  

  • 2 cans tuna drained
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon chili powder
  • salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice from 1/2 lime
  • 1/2 cup corn kernels
  • 1/2 cup red pepper diced
  • 1/3 cup black beans
  • 2 tablespoons red onion diced
  • 1 tablespoon cilantro chopped
  • 1 tablespoon jalapeno diced

Instructions
 

  • Drain the tuna, corn, and black beans well, then add the tuna to a medium mixing bowl.
  • Whisk Greek yogurt, mayonnaise, cumin, chili powder, olive oil, lime juice, salt, and pepper until smooth.
  • Flake the tuna with a fork so the dressing can coat it evenly.
  • Fold in corn, red pepper, black beans, red onion, cilantro, and jalapeno.
  • Taste and adjust with more lime juice, salt, pepper, or jalapeno as needed.
  • Cover and chill for 10 minutes before serving in wraps, bowls, lettuce cups, or with crackers.

Notes

Storage: Store the salad in an airtight container in the refrigerator for up to 3 days and stir before serving.
Reheating: This recipe is meant to be served cold, so do not reheat it before eating.
Freezing: Freezing is not recommended because the yogurt, mayonnaise, tuna, and vegetables can separate after thawing.
Best Tips: Drain the tuna, beans, and corn well so the salad stays creamy instead of loose or watery.
