Ingredients
  

  • 1 tablespoon unsalted butter
  • 1 tablespoon oil from sun-dried tomato jar or regular olive oil
  • 4 cloves garlic finely minced
  • 1.5 cups low-sodium chicken broth
  • 1.5 cups heavy cream
  • 0.5 cup sun-dried tomatoes in oil drained and chopped
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes or more to taste
  • 20 ounces refrigerated cheese tortellini
  • 0.75 cup freshly grated Parmesan cheese plus more for serving
  • 3 cups fresh spinach packed
  • salt and freshly ground black pepper to taste
  • 0.25 cup fresh basil chopped, for garnish

Instructions
 

  • Melt the butter with the sun-dried tomato oil in a large deep skillet over medium heat.
  • Add the minced garlic and cook for 30 to 45 seconds, stirring until fragrant but not browned.
  • Stir in the chicken broth, heavy cream, sun-dried tomatoes, oregano, and red pepper flakes.
  • Add the refrigerated cheese tortellini, stir gently, cover, and simmer for 5 to 7 minutes until tender.
  • Reduce the heat to low and stir in the Parmesan cheese until melted and the sauce is lightly thickened.
  • Fold in the spinach by handfuls and cook just until wilted.
  • Season with salt and black pepper to taste, then garnish with fresh basil and extra Parmesan before serving.

Notes

Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating: Reheat gently on the stove or in the microwave with a splash of broth or cream to loosen the sauce.
Freezing: Freeze for up to 1 month, but expect the cream sauce to be slightly less smooth after thawing.
