Ingredients
  

  • 4 cups cooked and chopped chicken
  • 1/4 cup diced celery
  • 1/4 cup diced red pepper
  • 3 tablespoons diced onion
  • 1/3 cup keto mayonnaise
  • 1/4 cup sour cream
  • 1 lime juiced
  • 2 chipotle peppers in sauce chopped, about 2 tablespoons
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup chopped cilantro
  • 1 tablespoon brown sugar substitute such as Swerve
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
 

  • Add the cooled chopped chicken to a large mixing bowl and separate any larger pieces.
  • Stir in the diced celery, red pepper, onion, and chopped cilantro until evenly combined.
  • In a small bowl, whisk together the keto mayonnaise, sour cream, lime juice, chipotle peppers, Dijon mustard, brown sugar substitute, salt, and pepper.
  • Pour the dressing over the chicken mixture and fold gently until the salad is evenly coated.
  • Taste and adjust with more lime juice, salt, pepper, or chipotle sauce if needed.
  • Cover and refrigerate for at least 20 minutes before serving cold.

Notes

Storage: Store Lime Chicken Salad in an airtight container in the refrigerator for 3 to 4 days.
Freezing: Freezing is not recommended because the mayonnaise and sour cream dressing can separate after thawing.
Best Tips: Mix the dressing separately before adding it to the chicken so the lime, chipotle, and seasoning are evenly blended.
