Ingredients
  

  • 1 medium spaghetti squash
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated parmesan
  • 1/3 cup pizza sauce preferably lower sugar
  • 1 cup shredded mozzarella
  • 24 slices pepperoni or to taste

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Cut the spaghetti squash in half, remove the seeds, and roast cut-side down until tender.
  • Scrape the squash strands into a towel and squeeze out as much moisture as possible.
  • Mix the drained squash with eggs, kosher salt, Italian seasoning, and grated parmesan.
  • Press the mixture into an even pizza-shaped layer on the prepared baking sheet.
  • Bake the squash base until the edges are golden and the center feels set.
  • Spread pizza sauce over the base, then top with mozzarella and pepperoni.
  • Return to the oven and bake until the cheese melts and the pepperoni edges curl.
  • Rest for 5 minutes before slicing so the base can firm up.
