Ingredients
  

  • 1 cup cottage cheese
  • 1 cup broccoli florets chopped
  • 1 cup bell pepper diced
  • 1 cup zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup spinach chopped
  • 1/2 cup red onion finely chopped
  • 1/4 cup shredded mozzarella cheese
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano

Instructions
 

  • Preheat the oven to 375°F and lightly grease an 8-inch baking dish.
  • Chop the broccoli, dice the bell pepper, slice the zucchini, halve the tomatoes, and chop the spinach and onion.
  • Whisk the eggs, cottage cheese, olive oil, garlic powder, onion powder, salt, pepper, and oregano in a large bowl.
  • Fold in the vegetables and half of the mozzarella until evenly coated in the cottage cheese mixture.
  • Spread the mixture into the prepared baking dish and sprinkle the remaining mozzarella over the top.
  • Bake for 28 to 34 minutes, until the center is set and the edges are lightly golden.
  • Rest for 10 minutes before slicing so the bake holds together cleanly.

Notes

Storage: Store cooled slices in an airtight container in the refrigerator for up to 4 days.
Freezing: Freeze individual slices for up to 2 months and thaw overnight before reheating.
Reheating: Warm slices in the microwave for 45 to 75 seconds or in a 325°F oven until heated through.
