Ingredients
  

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1/2 cup minced onion
  • 2 tablespoons minced garlic about 6 garlic cloves
  • 28 oz crushed tomatoes low or no sodium
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 4 cups low sodium beef broth
  • 2 cups water
  • 2 cups reginetti pasta or broken lasagna noodles about 5 oz
  • 1/4 cup ricotta cheese optional for serving
  • 1/4 cup grated Parmesan cheese optional for serving

Instructions
 

  • Heat olive oil in a large Dutch oven or soup pot over medium heat.
  • Add ground beef and cook until browned, breaking it into small pieces as it cooks.
  • Stir in onion and garlic, then cook for 2 to 3 minutes until the onion softens.
  • Add crushed tomatoes, bay leaf, dried herbs, black pepper, red pepper flakes, beef broth, and water.
  • Bring the soup to a gentle boil, then reduce the heat and simmer for 10 minutes.
  • Stir in the pasta and cook until tender, stirring often so the noodles do not stick.
  • Remove the bay leaf, taste and adjust seasoning, then serve with ricotta and Parmesan if desired.

Notes

Storage: Store cooled soup in airtight containers in the refrigerator for up to 4 days.
Reheating: Reheat gently on the stovetop or in the microwave and add a splash of broth if the pasta has thickened the soup.
Freezing: Freeze the tomato-beef soup base without pasta or cheese for up to 3 months for the best texture.
Best Tips: Cook the pasta just until tender because it will continue to soften slightly as the soup rests.
Variations: Use ground turkey, add spinach, or swap in broken lasagna noodles if you do not have reginetti.
Meal Prep: Store the pasta separately when possible so each reheated bowl tastes fresher.
