Ingredients

Instructions
 

  • Warm olive oil in a large soup pot over medium heat, then add onion, carrots, and celery.
  • Cook the vegetables for 6 to 8 minutes, stirring often, until the onion is translucent and the carrots begin to soften.
  • Stir in the minced garlic and cook for 30 seconds, just until fragrant.
  • Add the chicken broth, dried thyme, dried rosemary, salt, and pepper, then bring the soup to a simmer.
  • Simmer for 10 to 12 minutes, or until the carrots and celery are tender.
  • Stir in the shredded cooked chicken and frozen peas, then simmer until heated through.
  • Whisk the flour with the heavy cream or milk until smooth, then slowly stir it into the soup.
  • Simmer for 4 to 6 minutes, stirring often, until the soup thickens and turns creamy.
  • Taste and adjust salt and pepper, then serve warm with chopped parsley.

Storage: Let the soup cool, then store it in an airtight container in the refrigerator for 3 to 4 days.
