- 1 pound boneless skinless chicken breast diced
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 1 cup spinach chopped
- 1 bell pepper red or yellow, diced
- 1 zucchini diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups low-sodium chicken broth
- 1 cup cherry tomatoes halved
- 1/2 cup feta cheese crumbled
- 1/4 cup fresh parsley chopped, for garnish
Dice the chicken and vegetables, mince the garlic, chop the spinach, halve the tomatoes, and measure the orzo and broth.
Heat olive oil in a large deep skillet over medium heat, then add the diced chicken and cook until lightly browned.
