Notes

Storage: Store the cooked filling in airtight containers in the refrigerator for up to 4 days and keep fresh toppings separate.
Reheating: Reheat the filling in the microwave in short bursts or in a covered skillet over low heat until hot throughout.
Freezing: Freeze the filling without avocado, cilantro, or yogurt for up to 2 months, then thaw overnight before reheating.
Expert Tips: Blend the cottage cheese well and avoid boiling the sauce hard so the texture stays smooth.
Meal Prep: Portion the warm filling into containers and add the fresh toppings after reheating for the best texture.
Variations: Swap in grilled chicken, cooked tofu, pinto beans, pepper jack cheese, or extra sautéed vegetables.
Serving Ideas: Serve over rice, lettuce, cauliflower rice, or roasted vegetables depending on how hearty you want the bowl.
