Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning 1.3 ounce packet, about 4 tablespoons
  • 1/3 cup water
  • 1 tbsp tomato paste
  • 2 red bell peppers sliced
  • 1 red onion sliced
  • 1 tbsp olive oil
  • 2 cups cooked white rice
  • 1 1/2 cups corn
  • 2 cups romaine lettuce chopped
  • 1 avocado sliced before serving
  • 1 batch cilantro lime crema

Instructions
 

  • Cook the white rice if needed, chop the romaine, slice the avocado, and prepare the cilantro lime crema.
  • Heat olive oil in a large skillet over medium heat, then cook the bell peppers and red onion until tender-crisp.
  • Transfer the vegetables to a plate and cook the ground beef in the same skillet until fully browned.
  • Stir in taco seasoning and tomato paste, then add water and simmer until the beef is evenly coated.
  • Warm the corn in the skillet with the beef or heat it separately if you prefer layered bowls.
  • Divide cooked rice among four bowls, then add taco beef, peppers, onion, corn, romaine, and avocado.
  • Drizzle each bowl with cilantro lime crema and serve while the beef and rice are warm.

Notes

Storage: Store beef, rice, peppers, onion, and corn in airtight containers in the refrigerator for up to 4 days.
Reheating: Reheat the warm components in short microwave bursts, then add romaine, avocado, and crema after heating.
Freezing: Freeze the taco beef and rice mixture for up to 2 months, but do not freeze the lettuce, avocado, or crema.
