Ingredients
  

  • 1 pound sirloin or flank steak
  • 2 medium zucchinis sliced into half-moons
  • 1 cup cooked quinoa or brown rice
  • 1 tablespoon olive oil for zucchini
  • salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika optional
  • 1/3 cup soy sauce or tamari
  • 2 tablespoons olive oil for marinade
  • 2 tablespoons honey or maple syrup
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated, optional
  • 1/2 teaspoon black pepper
  • chopped green onions for serving
  • lime wedges for serving

Instructions
 

  • Whisk soy sauce, 2 tablespoons olive oil, honey, garlic, ginger, and black pepper in a shallow dish.
  • Add the steak and turn to coat, then marinate for 15 to 30 minutes.
  • Toss zucchini with 1 tablespoon olive oil, salt, pepper, garlic powder, and smoked paprika if using.
  • Grill steak over medium-high heat for 4 to 6 minutes per side, or until it reaches your preferred doneness.
  • Grill zucchini for 2 to 3 minutes per side until tender with light char marks.
  • Rest steak for 5 to 10 minutes, then slice thinly across the grain.
  • Divide quinoa or brown rice into bowls and top with steak, zucchini, green onions, and lime wedges.

Notes

Storage: Store steak, zucchini, and grains in airtight containers in the refrigerator for 3 to 4 days.
Freezing: Freeze sliced steak and grains for up to 2 months, but make fresh zucchini for best texture.
Reheating: Warm the grains and zucchini first, then add steak briefly so it stays tender.
Best Tips: Pat steak dry before grilling and slice it across the grain after resting.
