  • 1/2 cup brown sugar for the sauce

Notes

Storage: Store cooled pudding in an airtight container in the refrigerator for up to 4 days, keeping extra sauce separate when possible.
Freezing: Freeze baked pudding slices without sauce for up to 2 months, then thaw overnight before reheating.
Reheating: Warm slices in the microwave for 20 to 30 seconds or cover and reheat in a low oven until soft.
Expert Tips: Chop the dates small and let them fully soften so they blend into the sponge instead of staying chewy.
Sauce Tips: Simmer the toffee sauce gently and stir often so the cream stays smooth and does not scorch.
Variations: Add orange zest, a pinch of sea salt, or chopped pecans for a small twist that still fits the pudding.
Serving Ideas: Serve warm with vanilla ice cream, whipped cream, custard, or fresh berries for contrast.
