- 4 shallots diced, or 1 medium onion diced
- 1 rib celery diced
- 4 to 5 sprigs fresh thyme
- 2 cloves garlic minced
- 4 oz bacon lardons or 6 slices bacon, chopped
- 2 tbsp brandy or whiskey
- 2 tbsp all-purpose flour
- 1/3 cup chicken broth
- 1 1/2 cups hard dry apple cider
- 2 apples peeled, cored, and cut into wedges
- 1/2 cup heavy or double cream
Pat the chicken dry and season all sides with salt.
Heat olive oil in a Dutch oven over medium-high heat and brown the chicken in batches until golden on both sides.
Transfer the chicken to a plate, then cook the bacon until the fat renders and the edges begin to crisp.
Add shallots, celery, thyme, and garlic to the pot and cook until softened and fragrant.
Pour in the brandy or whiskey, scrape up browned bits, stir in the flour, then add the broth and dry cider.
Return the chicken to the pot, cover, and simmer gently for 35 to 40 minutes, until the chicken is tender.
