Ingredients
  

  • 2 cups pitted Medjool dates chopped, about 9 oz.
  • 1 1/4 cups boiling milk or water

  • 1 1/2 cups all-purpose flour

  • 1/2 cup light brown sugar
  • 2 large eggs room temperature
  • 1 1/2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter for sauce
  • 2/3 cup heavy cream
  • 1/2 cup light brown sugar for sauce
  • 1 teaspoon vanilla extract for sauce
  • 1/4 teaspoon salt for sauce

Instructions
 

  • Place chopped dates in a bowl, pour over boiling milk or water, stir in baking soda, and let soften for 10 minutes.
  • Grease and line an 8-inch square baking pan, then heat the oven to 350°F.
  • Whisk flour, baking powder, cinnamon, and salt in a separate bowl until evenly combined.
  • Beat butter with brown sugar until creamy, then mix in eggs one at a time and add vanilla.
  • Fold in the dry ingredients, then add the softened date mixture and stir just until combined.
  • Spread batter into the prepared pan and bake for 32 to 38 minutes, until the center springs back lightly.
  • Simmer butter, cream, brown sugar, and salt for 3 to 5 minutes, then stir in vanilla off the heat.
  • Cool the cake for 10 minutes, slice, and spoon warm toffee sauce over each serving.

Notes

Storage: Keep the cake covered in the refrigerator for 4 to 5 days. Store the sauce separately when possible so slices stay neat.
Reheating: Warm individual slices for 15 to 25 seconds in the microwave, then add warm toffee sauce before serving.
Freezing: Freeze cake slices without sauce for up to 2 months. Wrap tightly and thaw overnight in the refrigerator.
Expert Tips: Soak the dates until very soft and avoid overmixing once the flour goes in. This keeps the crumb tender.
