  • 1 cup low-sodium chicken broth
  • 1/2 teaspoon chili crunch oil or red pepper flakes optional
  • 2 tablespoons cornstarch
  • 2 tablespoons grated Parmesan cheese freshly grated preferred
  • 1/2 cup blended cottage cheese blended until completely smooth
  • 3 tablespoons fresh basil chopped for garnish

Instructions
 

  • Pat the chicken dry, then season both sides with salt, pepper, onion powder, and Italian seasoning.
  • Warm olive oil in a small skillet and cook the shallot and garlic for 1 to 2 minutes until fragrant.
  • Add chicken, cooked aromatics, sun-dried tomatoes, broth, and optional chili crunch oil or red pepper flakes to the slow cooker.
  • Cover and cook on low for 4 to 5 hours, or until the chicken reaches 165°F.
  • Whisk cornstarch with a few spoonfuls of hot cooking liquid, then stir it back into the slow cooker.
  • Stir in Parmesan and blended cottage cheese on low, let the sauce thicken for 10 minutes, then garnish with basil.
