Ingredients
  

  • 200 grams dried pasta or 300 grams fresh pasta
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 300 grams mushrooms sliced
  • 4 cloves garlic finely chopped
  • 1 tablespoon fresh thyme leaves finely chopped
  • 1 tablespoon fresh rosemary leaves finely chopped
  • 1/2 cup white wine sauvignon blanc or pinot gris
  • 3/4 cup cream
  • 1 teaspoon black pepper
  • 1 tablespoon fresh lemon juice plus zest for serving
  • 50 grams parmesan very finely grated
  • 1/2 cup flat leaf parsley finely chopped
  • salt to taste

Instructions
 

  • Bring a large pot of well salted water to a boil and cook the pasta until al dente.
  • Reserve 1 cup of pasta water, then drain the pasta and set it aside.
  • Heat oil in a large skillet over medium heat, add mushrooms, and cook until browned and reduced.
  • Add butter, garlic, thyme, and rosemary, then cook for about 1 minute until fragrant.
  • Pour in the white wine and scrape the pan, simmering until the wine reduces slightly.
  • Stir in cream and black pepper, then simmer gently until the sauce begins to thicken.
  • Add parmesan, lemon juice, and a splash of pasta water, stirring until the sauce is smooth.
  • Toss in the pasta and parsley, season with salt, and serve with lemon zest.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezing: Freeze the sauce without pasta for up to 1 month, knowing cream sauce may separate slightly after thawing.
Reheating: Reheat gently in a skillet with a splash of water, milk, or cream until smooth and steaming hot.
Expert Tips: Brown the mushrooms before adding garlic so the sauce has deeper flavor and does not taste watery.
