Ingredients
  

  • 2 tablespoons butter
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 1 pound mixed mushrooms sliced, such as cremini, shiitake, or button
  • 4 cups low-sodium vegetable broth
  • 1 cup cottage cheese full-fat preferred
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper freshly cracked
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Melt butter in a large soup pot over medium heat, then cook the diced onion for 4 to 5 minutes until softened.
  • Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  • Add the sliced mushrooms, thyme, salt, and pepper, then cook until the mushrooms release liquid and become tender.
  • Pour in the vegetable broth, bring the soup to a gentle boil, then reduce heat and simmer for 12 to 15 minutes.
  • Blend the cottage cheese with about 1 cup of warm soup broth until smooth.
  • Stir the blended cottage cheese into the pot and warm gently without boiling hard.
  • Taste and adjust salt or pepper, then serve with chopped parsley on top.

Notes

Storage: Cool the soup and refrigerate it in an airtight container for up to 4 days.
Reheating: Warm gently on the stovetop or in the microwave, stirring often and adding broth if needed.
Freezing: Freeze for up to 2 months, but expect the dairy base to need whisking or blending after thawing.
