Notes

Storage: Keep cooled squares in an airtight container at room temperature for 24 hours or refrigerate for 3 to 4 days.
Freezing: Wrap individual squares tightly and freeze for up to 1 month, then thaw in the refrigerator or at room temperature.
Reheating: Microwave chilled or frozen slices for 10 to 20 seconds to soften the chewy center.
Best Tips: Use sweet rice flour only, whisk the batter until smooth, and cool the cake fully before cutting.
Variations: Add toasted coconut on top, serve with mango or pineapple, or mix in a little lime zest for brightness.
Serving Ideas: Serve at room temperature with tea, coffee, fresh fruit, or a small spoonful of lightly sweetened cream.
