- 1.5 lbs boneless, skinless chicken breasts cut into small pieces
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper to taste
- 1/3 cup honey
- 2-3 tablespoons hot sauce
- 1 cup sour cream
- 1-2 fresh jalapeños deseeded and chopped
- 1 teaspoon lime juice
- 1/2 teaspoon salt to taste
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons butter for grilling
- fresh cilantro chopped, to taste, for garnish
Toss chicken pieces with smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
Heat olive oil in a large skillet over medium heat and cook the chicken until browned and 165°F inside.
Stir honey and hot sauce into the skillet and simmer until the chicken is glossy and well coated.
Blend sour cream, jalapeños, lime juice, and salt until smooth, then refrigerate the sauce until serving.
Add cheddar, Monterey Jack, and hot honey chicken to one half of each tortilla, then fold closed.
Melt butter in a skillet and cook each quesadilla until golden on both sides and melted in the center.
Let quesadillas rest for 2 minutes, then slice into wedges and serve with cilantro and jalapeño cream sauce.
Storage: Store cooled quesadilla wedges in an airtight container in the refrigerator for up to 3 days and keep the sauce separate.
Reheating: Reheat in a skillet over medium-low heat or in an air fryer at 350°F until hot and crisp.
Freezing: Freeze cooked quesadillas without sauce for up to 2 months, wrapped tightly and stored flat.
Expert Tips: Let the hot honey chicken cool slightly before filling the tortillas so the cheese melts evenly without sliding out.
Variations: Use rotisserie chicken, shredded chicken, Pepper Jack cheese, black beans, or sautéed peppers for a different filling.
Sauce Tips: Remove jalapeño seeds for a milder sauce, or leave a few in for more heat.
